Farmers have long cultivated wasabi over Okutama's stone terraces―stacked one rock at a time―in a place where spring water constantly flows. But super-aging has hit the farming community. The Tsunoi brothers have stepped in by not only growing wasabi, but also creating recipes using it to keep the tradition going.
