For this recipe, you only really need a knife and a cutting board, but if you have a blender or a food processor, it will cut the prep time in half for you. You will need some raw nori sheets and a sushi roller to help you roll out the sushi.
Chop up all of your rainbow ingredients that you want to use in your sushi. There is no right or wrong here, it’s whatever you desire. This recipe along with all of the ingredients in this video will be shared on my website at http://www.fullyraw.com. For the rice of this sushi, I am going to be using shredded or finely chopped jicama, purple cauliflower, and yellow cauliflower! You can dice these with a knife or use a food processor to get this very fine, grainy consistency. Then, I also have chopped up some rainbow bell peppers, beets, cucumber, carrot, purple cabbage, red onion, mango, and avocado!
To make your sushi, grab a nori sheet and place it smooth side down. Grab some jicama, sprinkle it on, and press it onto your nori, then, do the same with your yellow cauliflower and your purple cauliflower. When you have all 3 of these layered and pressed down onto your nori, they will look like a little tri-colored rainbow. Make sure to leave a little room around the edges of the nori for later.
Grab some cucumber and lay it on top, add some bell peppers, sprinkle on some shredded beets, add some shredded carrots, some purple cabbage, red onion, mango, and AVOCADO to top it off! Now this is going to be TOO
