Hotelier Francis Brennan hits the high seas to put his hotel experience to the test as he steps into senior roles on a Baltic cruise, as well as hosting a series of shore trips.

Francis Brennan faces a huge challenge as Hotel General Manager. After a tour of Tallinn, he battles against the clock to get all guests back on-ship before they set sail again.

With 3500 guests to feed for 10 days, running the ships restaurants is one of the toughest jobs onboard. As Francis becomes MaitreD, he will be silver servicing, making pizzas and put in charge of room service. Then Francis is in charge for 'formal night.
