Seven years in the planning, two years in its construction, the Harris Distillery is in its first year of existence. This first of three episodes follows the lead up to and first working year at the Harris Distillery. After some delays in construction and the inevitable technical glitches, their Harris gin goes straight into production. Hot on its heels is the distillery's primary function, and the team work up to distilling their first Hearach whisky. The distillery staff have all been recruited locally and are collectively known as the "Tarbert Ten". They share a commonality in having never been involved in the distillery business, but are keen to prove that they are more than able to create a historic happening on the Isle of Harris.

The team are under pressure to be in production before the grand opening day arrives, and this second of three episodes sees a few technical glitches get sorted out as the team draw on local resources and knowledge before the distillery open for business. Their first festive season sees the community centred around the distillery peat fire, and history is made when the first Harris whisky spirit is distilled.

With visitor numbers exceeding all expectations, and sales of Harris gin hugely surpassing initial forecasts, the team are all working flat out to keep up. But it's not all taking place inside the distillery, retail manager Peter is curious about where peat, used in the whisky making, comes from. Domhnall, one of the distillers, happily obliges and takes him out to the site of his grandfather's peat banks. As the distillate has been tweaked and optimised, the first private cask is filled by Anderson Bakewell, founder and Chairman of the distillery, and in what seems like the blink of an eye the first year anniversary is upon them.
