In de Proefbrouwerij in Lochristi wordt bier wetenschappelijk maar ook met veel passie benaderd. Jean en Ray ontdekken er onder meer de Troubadourbieren. Een ritje door het Oost-Vlaamse landschap brengt hen bij Dr. Canarus en zijn biertriporteur. Hij ontkurkt voor hen zijn zeldzame Maeght van Gottem. Jean en Ray zetten daarop koers naar het Meetjesland, waar ze "Paling op Sentse wijze" zullen bereiden met de Augustijn Grand Cru. Daarvoor moeten ze zelf de ingrediënten vinden: paling en garnalen.
