He begins by picking his first 12 trainees, but is taken aback by how little they know about cookery. In an attempt to get them focused on the task at hand, he challenges them to cook dinner for the whole prison - even though they risk upsetting their fellow inmates if the meals are not up to scratch

Gordon must trust the prisoners with sharp knives if they're to be able to cook on the inside to sell on the outside. He develops a lemon curd treacle tart for production, and for the first time Bad Boys Bakery bread and cakes are flogged to the general public in a pop-up shop.
One bad boy, Jerome, has been making it hard for Gordon by verbally abusing prison officers, and has been busted down to basic privileges.
The prison's stringent systems and routines start getting to Gordon.
