For this dish you need 1 lamb about 2 kg, ½ tablespoon salt, 1 teaspoon black pepper, 4 stalks of rosemary, 5 cloves of garlic, 1 onion, ¼ celery root, 1 carrot, ½ fennel, 1 l water or broth, 1 dl dry white wine , 2 tablespoons dijon mustard, the juice of ½ lemon, salt, pepper and olive oil.
