You're going to love this easy vegan recipe for aquafaba (like whipped cream) made from chickpea brine! It's light and fluffy and perfect to dollop atop vegan breakfast foods and vegan desserts.
AQUAFABA RECIPE:
* Note—this makes a huge portion, but you can easily halve the recipe.
- 2 cans garbanzo beans (Salt is fine, but try to get organic beans without preservatives. You'll just use the liquid "brine" from these.)
- ¼ heaping teaspoon of Cream of Tartar
- 2 teaspoons of vanilla extract
- 1 cup finely ground white sugar
INSTRUCTIONS:
Mix the liquid from two cans of chickpeas with the cream of tartar. Then add the vanilla extract and sugar and whip using a stand mixer or hand mixer with two beaters for 10-15 minutes until sturdy peaks form. Don't worry, you won't ruin it by whipping it too long, just be patient!
AQUAFABA RECIPE NOTES:
You can use this as whipped cream, use it as egg replacer, or even bake it into meringues!
