Most izakaya fall into two general categories: old-fashioned independently run pubs, and chain establishments. Both share a place in the hearts of the Japanese. Our expert guest this time is Kenji Hashimoto, a sociologist who has spent the last 25 years conducting fieldwork in izakaya all around Japan.
