Last week I finished the spirit run for my bastard whisky. Now its time to asses the cuts. I want to decide which cuts have something worth contributing to the final blend, and what should be left out.
Its all about finding the heads, hearts and tails & hunting out other flavours that may work well as the whiskey ages.
