Robert Maklowicz leads us to Fort Santiago - the first building that Spaniards erected in Manila - located in today's Intramuros district. After the Spaniards, Americans became the rulers of the Philippines at the beginning of the 20th century. They left behind the ubiquitous English words and dishes such as meat in a bun. Robert's Manila menu is much more interesting: kare - beef tails stewed in peanut sauce, pork knuckle and pork offal, barbecue chicken, sour tamarind sinigang soup, shark fin soup and sea cucumber or trepang.
